Perfect to make on a weeknight when you’re short on time! Just pour it over your favorite pasta or gnocchi – I used @traderjoes cauliflower gnocchi … If you haven’t tried it, go get some now!
If you don’t want to use beef, feel free to use whatever ground meat you prefer or even beans. Just leave off the parmesan at the end to keep it dairy-free and paleo or Whole-30 friendly too 😊
Recipe makes 4 servings
- 1 tbsp ghee or olive oil
- 2 shallots, diced
- 2 cloves garlic, minced
- 1 lb. ground beef
- 2 tsp dried oregano
- ½ tsp dried basil
- ½ tsp salt
- ¼ tsp black pepper
- 1 14oz can diced tomatoes, no salt
- ¼ cup chicken broth
- ½ cup coconut milk
- ½ cup parmesan, grated
- ¼ cup fresh basil
- Heat the ghee or olive oil in a large skillet over medium-high heat. Add the shallots, sauté for 3-4 minutes until softened. Add the garlic, beef, oregano, basil, salt, and pepper. Break up beef and sauté until browned and cooked completely.
- Once beef is cooked, add diced tomatoes, chicken broth, and coconut milk. Let simmer for about 3-4 minutes.
- That’s it! Serve over your favorite pasta or gnocchi (I used Trader Joe’s cauliflower gnocchi). Top with parmesan and fresh basil.
