Fall has some of my favorite flavors – pumpkin, pecan (with or without chocolate 😋), and of course cinnamon apple.

If you want all the magic of apple pie without the hassle of working with pie dough, here is the perfect solution!

These bars are also healthier! I used sweet apples, so the recipe only has a little maple syrup and coconut sugar to sweeten it.

They’re also gluten-free and lactose-free. For a vegetarian option, just use coconut oil instead of ghee.

Recipe makes 9 bars

Ingredients

Base

  • 2 tbsp ghee, melted
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1.5 cups almond flour
  • ¼ cup tapioca flour
  • ¼ tsp salt

Apples

  • 3 fuji apples, peeled & sliced to ¼” thick
  • ¼ cup water
  • ½ tbsp lemon juice
  • 1 tsp cinnamon
  • 2 tbsp coconut sugar
  • 1 pinch salt 
  • 1 tbsp tapioca flour

Topping

  • 2 tbsp ghee, melted
  • 1 pinch cinnamon
  • 1 pinch salt
  • 2 tbsp coconut sugar
  • ¼ cup tbsp almond flour

Directions

  1. Combine all apple ingredients in bowl and toss to evenly coat. 
  2. Bake crust 350F in 8×8 dish for 10 min
  3. Add all apple ingredients to pot except tapioca, toss to coat, low heat 5 min… turn off heat but leave on burner – add tapioca, toss to coat for 1 min. pour on crust (apples flat and evenly spread), can lightly press down w flat spatula
  4. Mix w hands, sprinkle on apples. Bake 25-30 min (28).
  5. Let cool completely before cutting – I refrigerated
