BBQ Shredded Chicken (Instant Pot)

As promised on my 4th of July carolina-style bbq sauce post, here is my simple and delicious shredded BBQ chicken for the Instant Pot!

This is really a great protein for meal prep and is very versatile. You can add to wraps, rice bowls, sandwiches, or it’d be super yummy on tacos too. And if you make extra, freeze it for meals later! Enjoy :)

Recipe makes 4-6 servings

  1. Pour the broth into the Instant Pot, followed by the chicken.

  2. Pour 1 cup of BBQ sauce onto the chicken, then sprinkle the diced onion on top. DO NOT STIR - leave the layers as they are to avoid a burn notice on your Instant Pot.

  3. Close the vent to “sealing” and set the Instant Pot to High Pressure for 25 minutes.

  4. Once cooking is complete, allow it to naturally release pressure for 10 minutes before carefully turning the vent to “venting” and releasing the rest of the steam.

  5. Remove the chicken and the onion pieces, place them into a bowl - I used a slotted spoon to get the onion out. Discard the liquid in the Instant Pot.

  6. Shred the chicken, then toss it in the rest of the BBQ sauce.

  7. That’s it! Store leftovers in an air-tight container in the refrigerator.
