Chicken Penne Alla Vodka

This one is such an easy weeknight dinner and a really healthy and balanced way to enjoy a fun food, like pasta. There are 6 servings here, which makes it perfect as leftovers during the week or it can be frozen for later.

Feel free to add a side salad or roasted veggies if you want more volume and fiber in your dinner!

Recipe makes 6 servings

Ingredients

  • 2 lb. chicken breast, boneless & skinless

  • 8oz shiitake mushrooms

  • 12oz penne pasta (gluten-free if needed)

  • 1 24oz jar of vodka sauce (I used Due Celluci)

  • 1 tbsp olive oil

  • Salt & black pepper, to taste

  • Optional: grated parmesan, fresh basil

Directions

  1. Cut the chicken into bite-sized pieces. Clean, then thinly slice the shiitake mushrooms.

  2. Heat the olive oil in a pan over medium heat, then add the chicken. Season with salt and pepper, then cook until almost cooked through. Add the mushrooms and continue to cook the chicken and mushrooms until the chicken is no longer pink in the center and the mushrooms have softened.

  3. Cook the penne according to instructions on the box. Once cooked, pour the vodka sauce over the pasta and toss to coat. Add the chicken and mushrooms, toss again.

  4. Serve topped with grated parmesan cheese and/or chopped fresh basil.
