Chicken Tortellini Bowl
This Chicken Tortellini Bowl is going to be your new favorite weeknight dinner 🌿✨
It’s only a few ingredients, super easy to make, and is seriously SO satisfying. It’s also a really balanced way to enjoy a fun carb like tortellini, while giving your body lots of healthy nutrients and 43g of protein.
Prep a few servings to have as easy lunches or dinners throughout the week!
Recipe makes 4 servings
Ingredients
1 lb. chicken breast
lemon pepper seasoning
1 tbsp olive oil, divided
3 cups tortellini, any kind
I used spinach & feta
1 yellow onion, thinly sliced
4 cups spinach
1 pint cherry tomatoes, halved
½ cup parmesan, grated
¼ cup pesto
Directions
Season the chicken breast well with the lemon pepper seasoning. In a large skillet, heat ½ tbsp olive oil over medium heat. When the oil is hot, add the chicken and cook for about 4-5 minutes on each side or until cooked-through (no pink inside if you cut it in half).
In a small saucepan, heat the other ½ tbsp of olive oil over low-medium heat and add the onion. Close the lid and let them cook down slowly, stirring every so often. It may take 10-15 minutes, but the goal is for them to be very soft and begin to caramelize a bit. If they begin to stick to the pan, add a little water (1-2 tbsp).
Cook tortellini according to package instructions, then set aside.
Assembly: divide everything except the pesto (spinach, chicken, tortellini, tomatoes, onions, parmesan) into 4 bowls or containers if you’re prepping. Note: If you’re prepping and don’t want to reheat the spinach and tomatoes later, just keep them separate.
When you’re ready to eat, add 1 tbsp of pesto (mix it with a little water if you want to drizzle it). Mix it all together and enjoy!
