Coconut Rice

Say goodbye to boring rice! I’ve always loved coconut rice at restaurants and never really thought to try making it. I would have done it so much sooner if I had only known how simple it is!

Just follow the instructions on your rice package and replace 2/3 of the water or broth with coconut milk! That’s it! It comes out SO rich and creamy.

The rice I used called for 1 ½ cup of liquid per 1 cup dry rice, so I used 1 cup coconut milk and ½ cup water. Just make sure you check the ratio for the rice you choose to use.

I recommend serving this as a side to my sweet potato chicken curry, cashew curry salmon, cashew chicken, or honey sesame shrimp.

Recipe makes 2 servings

Ingredients

  • ½ cup (90g) long-grain white rice (Jasmine works great)

  • ¾ cup coconut milk (light or full-fat)

  • ¼ cup water

Directions

  1. Just add all ingredients to a pot, cover, and boil.

  2. Stir occasionally and keep cooking until rice has absorbed liquid.

  3. That’s it! Serve with literally anything, but I love it with Asian-inspired meals.
