Creamy Tiramisu Overnight Protein Oats

If you’ve never made overnight oats with oat flour, get ready to experience this magic… They’re sooo smooth and creamy + that cacao nib crunch! ✨

Nutritionally, they’re packed with 8g fiber (that’s about ⅓ of your daily needs 🎉) and 43g of protein, which both help to keep you satisfied and energized for longer.

Try prepping them for an easy grab-and-go breakfast during the week!

Makes 1 serving (make more for meal prep!)

Ingredients

COFFEE OATS

  • â…“ cup (heaping) (40g) oat flour

  • 1 ½ tbsp (10g) ground chia seed (or ground flax)

  • 1 tsp instant coffee

  • â…“ cup milk (any kind)

  • 1 scoop vanilla protein powder

    • (I used whey, but any type can be used. you just may need to adjust the amount of milk)

GREEK YOGURT LAYER

  • ½ cup Greek yogurt, 2%

  • 1 tsp maple syrup

TOPPINGS

  • Cacao powder

  • Cacao nibs

    • (I highly recommend using the sweet ones!)

Directions

  1. In a bowl, combine oat flour, ground chia, instant coffee, and protein powder.

  2. Add the milk and mix until smooth, scraping the bottoms and sides.

  3. In a separate bowl, mix together the Greek yogurt and maple syrup.

  4. Layer in a jar or container: ½ the oat mixture, ½ the greek yogurt, then repeat.

  5. Top with a sprinkle of cacao powder and some cacao nibs.

  6. Cover and refrigerate for 1-2 hours or overnight, then enjoy!
