Easy Ground Beef Tacos

Happy Taco Tuesday! I made these ground beef tacos a few nights ago and they were a big hit with the family. I may have had to break up a fight over the last one…

I love that the only cooking required here is the ground beef. And even that is just thrown into a pan with some onions and taco seasoning, then you’re done!

Recipe makes 4 servings

Ingredients

  • Olive oil

  • 1 red onion, diced

  • 1 lb. ground beef

  • 1 packet taco seasoning

  • 12 soft 6” tortillas

  • Shredded lettuce

  • 1 large tomato, diced

  • 2 radishes, thinly sliced

  • 1 jalapeño, thinly sliced

  • 1 avocado, sliced

  • 4oz pepper jack cheese, shredded

  • Greek yogurt

Directions

  1. Heat a little olive oil in a pan on medium-high heat, add the red onion and saute until softened. Add the ground beef and taco seasoning, cook until beef is browned. Remove and set aside on a plate.

  2. Now just warm some tortillas and assemble the tacos! I like to spread some Greek yogurt on the bottom topped with a little lettuce, then beef, tomato, cheese, avocado, and finally the radishes and jalapeño.

  3. That’s it! Enjoy!
