Quick-Pickled Jalapeño Red Onions

I’m always looking for fun toppings to spice up my healthy meals and this is one of my favorites! They’re perfect on top of any Mexican-inspired like tacos, burrito bowls, quesadillas, and huevos rancheros!. These are also delicious on top of a burger for a little kick.

They take about 5 minutes of prep work and pickle pretty quickly (the thinner you slice the onions, the faster it will be). I suggest making them the day before you plan on eating them to allow the onions to soften and the flavors to infuse.

Recipe makes about 4 servings

Ingredients

  • 1 red onion, sliced thinly

  • 1 jalapeño, seeded and diced

  • ½ cup apple cider vinegar

  • 1 cup water

  • 1 tbsp honey

  • ½ tsp salt

Directions

  1. Add the vinegar, water, honey, and salt to a big jar or bowl. Whisk to combine until the honey is dissolved.

  2. Add the onions and jalapeños to the brine and stir. Make sure the onions are submerged in the brine (add more liquid if you’re using a big onion).

  3. Cover and refrigerate for a few hours to ideally overnight.
