Sesame Chicken Lettuce Wraps (20-Minute Meal)

Healthy and weight-loss friendly meals do need to be boring and tasteless - and these lettuce wraps are a perfect example!

This recipe uses ground chicken or turkey (great no-prep meat option!) and is made in one pan in about 20 minutes. A perfect weeknight meal and it keeps well in the fridge for a few days if you want to prep it ahead of time - just store the lettuce separately.

Recipe makes 4 servings

Ingredients

  • 1 tbsp toasted sesame oil 

  • 1 large shallot, diced

  • 2 green onions, sliced (white and green parts separated)

  • 1 red bell pepper, thinly sliced

  • ¼ tsp salt

  • 1 lb. ground chicken or turkey

  • Sauce:

    • 3 garlic cloves, minced

    • 1 tbsp ginger, grated

    • ¼ cup organic tamari or coconut aminos

    • 2 tbsp almond butter 

    • 1 tbsp Worcestershire sauce

    • ½ tbsp honey

    • Optional: ¼ tsp red pep flakes

    • Butter lettuce

    • Sesame seeds

    • Optional: Sriracha

Directions

  1. In a large skillet, heat the sesame oil over medium heat. Once hot, add the shallot, white part of the green onions, bell pepper, and salt. Cover and cook until vegetables are soft, stirring every 30 seconds or so.

  2. Add the ground chicken (or turkey) to the vegetables and break up with a spatula as it cooks. 

  3. While the chicken cooks, combine the sauce ingredients in a small bowl and whisk until smooth.

  4. When the chicken is cooked-through, drizzle the sauce overtop and toss to coat. Let the mixture cook another minute before it removing from the heat.

  5. Serve it over the butter lettuce leaves and top with sesame seeds, the green part of the green onions, and sriracha if you want some more heat.
