Summer Salmon Salad

My favorite meal when times get busy is a big ‘ol salad like this one - loaded with fruit, cheese, nuts, and a good source of protein.

The only cooking involved is baking the protein, which can be prepped ahead of time, so it really is the perfect weekday lunch or dinner! It’s also full of nutrients from the berries (high in anti-oxidants) to the salmon (full of healthy Omega-3 fats).

Meal Prep Tip: Bake the salmon and portion out the rest of the ingredients ahead of time, then just drizzle on the dressing when you’re ready to eat!

Recipe makes 4 servings

Ingredients

  • 4 salmon fillets

  • Lemon pepper seasoning

  • 6 cups mixed greens

  • 1 cup strawberries, diced

  • 1 cup blueberries

  • 2oz cashews

  • 2oz sliced almonds

  • 2oz feta, crumbled

  • Dressing of choice (I used balsamic)

Directions

  1. Heat oven to 400F. Place the salmon on a baking sheet lined with parchment paper. 

  2. Sprinkle salmon with lemon pepper seasoning, add some salt if it's not already in the lemon pepper mix. Bake for 18-20 minutes or until fish is no longer opaque and flakes easily with a fork.

  3. Add the mixed greens to a plate. Toss with dressing of your choice - I just drizzle on balsamic vinegar.

  4. Sprinkle on the strawberries, blueberries, nuts, and feta. Top with a piece of salmon and enjoy!
