Wild Blueberry Banana Bread

I teased this wild blueberry banana bread on my Instagram story last week and it’s finally hereee! It’s seriously so yummy and only has 185 calories in each piece.

It’s a variation of my 5-ingredient banana bread, so it has no added sugar either. Not because sugar is “bad” but it’s honestly so yummy with just the bananas & blubes, it doesn’t need it!

Try a piece with coffee in the morning or as a pre-workout snack (which is what I’ve been doing alllll week!)

Recipe makes 1 loaf (6 slices)

Ingredients

  • 3 (300g) medium ripe bananas, mashed

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1 3/4 cups (160g) oat flour - set aside some (~10g)

    • Can sub 2 cups (160g) old-fashioned rolled oats, ground finely into flour

  • 1 tsp baking soda

  • 1/4 tsp salt

  • 1 cup frozen wild blueberries

  • Optional Toppings:

    • 1 tbsp sugar or sugar alternative

Directions

  1. Preheat oven to 350°F. Grease a bread loaf pan or line with parchment paper and set aside.

  2. Mash the banana in a bowl, then add the eggs and mix to combine. In another bowl, mix together the oat flour (150g), baking soda, and salt.

  3. Add dry ingredients to wet ingredients, mixing just until incorporated – do not over-mix.

  4. In a separate bowl, toss the frozen blueberries in the 10g of oat flour, until coated. Then fold into the batter. This is optional, but will prevent the whole loaf from turning blue when you mix in the berries!

  5. Pour mixture into the pan and smooth the top. Optionally, evenly sprinkle the sugar or sugar alternative on top.

  6. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.

  7. Let the banana bread cool, then slice and store in an airtight container in the refrigerator.
