Chocolate Peppermint Banana Pops

The fall season was delicious as always, but now it’s time to bring on the winter festivities and treats!

These are super fun and easy to make - only 3 ingredients and take 5 minutes of work. Prep them to have in your freezer as a fun healthier treat when you’re craving something sweet this winter.

Recipe makes 4 servings

Ingredients

  • 2 bananas, ripe

  • ¾ cup dairy-free semi-sweet chocolate

  • ¼ tsp peppermint extract

  • ¼ tsp coconut oil

  • Crushed candy cane

  • Wooden skewers or popsicle sticks

Directions

  1. Line a plate or Tupperware with parchment paper.

  2. Peel and cut the bananas in half. Put the skewer or popsicle stick in each banana half and place them on the parchment paper. Freeze overnight or at least for a few hours.

  3. Place the chocolate in a microwave-safe bowl and melt for 1 minute at 50% power, stir. Continue to melt in 30 second intervals at 50% power, stirring after each time, until smooth. Add the peppermint extract and coconut oil, mixing until smooth.

  4. Prepare the crushed candy cane in a bowl. You will need to work quickly to sprinkle the candy cane because the chocolate hardens fast in the next step, só have everything ready.

  5. Dip each banana half in the chocolate (you can partially dip them like I did) and sprinkle (don’t roll) with the crushed candy cane. Hold it for a few seconds as the chocolate gardens, then lay it on the parchment paper again.

  6. Repeat with the remaining banana halves. Place in the freezer in an airtight container until you’re ready to eat them. Enjoy!

  7. Note: if you have leftover chocolate, spoon it onto a piece of parchment paper, let it harden in the refrigerator, then place it in a bag or container to use later - you can make more banana pops or melt it on some oatmeal, smoothie bowl, etc.
