Easy Prosciutto-Wrapped Cod

I’m making sure to balance out the holiday treats with some lighter & healthier meals like this one - and better yet, it’s basically 2 ingredients!

The flaky fish with the smoky & salty prosciutto is such a good combo! I served this cod over my Creamed Lemon Spinach with White Beans. Another really easy recipe that is also super delicious.

The meal all together is light and fresh. It’s also well-balanced with protein, fat, carbs from the beans, and greens/fiber from the spinach. Just perfect!

Recipe makes 4 servings

Ingredients

  • 4 cod filets (~4oz each)

  • 8 pieces prosciutto 

  • Salt

  • Pepper

  • Olive oil

Directions

  1. Preheat oven to 400F and line a baking sheet with parchment paper.

  2. Sprinkle each cod filet with pepper and a tiny bit of salt (not much since the prosciutto is salted).

  3. Wrap each piece of cod in 2 slices of prosciutto, positioning the seam on the bottom side. Brush with a little olive oil.

  4. Place the wrapped fish on the baking sheet and bake for 10-12 minutes or until the fish is cooked though.
