Cranberry Walnut Salad

I’m a firm believer that if you don’t like salads or find them boring & unsatisfying, you’re just not doing it right! Eating healthier is all about learning what satisfies you and including those foods and textures in nourishing meals.

My salads usually have fruit, cheese, nuts, avocado, and always a protein like chicken, salmon, or eggs.

That combo includes some carbs, healthy fat, protein, and lots of fiber. Keeping you satisfied for hours!

This one is SO good and perfect for fall! Just top with your favorite dressing.

Recipe makes 4 servings

Ingredients

  • 4-6 cups baby greens

  • 1 lb. baked chicken, diced

  • 4 soft-boiled eggs, diced

  • 2oz cheddar, diced

  • ¼ cup dried cranberries

  • ¼ cup walnuts, toasted & chopped

  • Dressing of your choice! I used a balsamic

Directions

  1. Place lettuce on a plate or in a serving bowl.

  2. Layer remaining ingredients on top.

  3. Wait to add dressing until just before serving. 

  4. Enjoy!
