Huevos Rancheros

Recipe makes 4 servings

Ingredients

  • 2 chorizo sausages, uncooked

  • 1 can refried beans

  • 2 avocados, diced

  • 8 eggs

  • Cheese, shredded (I like a pepper jack) - omit for dairy-free

  • Salsa (your favorite kind)

  • Toppings: Hot sauce, chives

Directions

  1. Heat some olive oil or ghee a pan over medium-high heat. Remove the casing from the sausages and add the ground meat to the pan. Sauté and break up into bits. Allow to cook until it becomes crispy (this is important for texture, don’t take it off just as soon as it’s cooked through)

  2. Remove the sausage from the pan and add the refried beans until they’re warm.

  3. Cook eggs in your favorite way in a pan with a little oil or ghee (I like to make them over-easy).

  4. To assemble, spread some warmed refried beans on the bottom of the plate, top with crispy chorizo, then add 2 eggs, followed by cheese, salsa, hot sauce, and chives.
