PB Chocolate Magic Shell Cups (high-protein)

These magic shell Greek yogurt cups do exactly that! If you have a sweet tooth like I do, choosing one of these will allow you to honor that craving while giving your body 23g of protein, healthy fats, and more fiber/volume to keep you satisfied longer.

They’re also a really prepable snack. Just multiply the recipe by however many servings you want to make ahead for the next few days!

Recipe makes 1 serving

Ingredients

  • ¾ cup Greek yogurt (non-fat)

  • 1 tsp honey

  • 1 tbsp powdered peanut butter (i.e., PB2 or PB Fit)

  • 5g dark chocolate, melted

  • optional: ⅛ tsp coconut oil

  • 5g peanuts (toasted, chopped)

  • sea salt

Directions

  1. In a bowl, mix together the Greek yogurt, honey and powdered peanut butter. Transfer to a jar or small Tupperware and smooth out the top.

  2. If using the coconut oil, mix with the melted chocolate. This is optional, but can make the chocolate a little smoother and easier to work with.

  3. Pour the chocolate onto the Greek yogurt mixture and smooth out - try to do this fairly quickly because it will solidify on the cold Greek yogurt.

  4. Sprinkle on the peanuts and a little sea salt.

  5. Cover and refrigerate until you’re ready to enjoy (up to 3-4 days).
