Skillet Taco Bowl

Coming at you with another super easy weeknight recipe! This one literally took 30 minutes to make and is packed with protein to keep you satisfied.

It also makes a great meal prep recipe because it stores and reheats really well! Just wait to add your toppings until the day you plan to eat it.

Recipe makes 4 servings

Ingredients

  • 1 tbsp olive oil

  • 1 yellow onion, diced

  • 1 red bell pepper, diced

  • 1 lb. ground beef (or turkey, chicken)

  • ½ packet taco seasoning

  • Optional: ¼ tsp salt - if taco seasoning is salt-free

  • 1 cup corn (frozen or fresh)

  • 1 cup (180g) rice

  • Toppings:

    • 1 cup cherry tomatoes, halved

    • 1 avocado, diced

    • Shredded cheese

    • Lime, sliced

    • Hot sauce

Directions

  1. Cook rice according to instructions while you follow the next steps.

  2. Heat olive oil in a large skillet over medium heat. Once hot, add the onion and pepper. Sauté until vegetables are soft (about 5 minutes).

  3. Add the ground beef, taco seasoning, and salt if the seasoning is salt-free. Break up meat and cook until browned.

  4. Once cooked, taste and decide if you want to add more seasoning. Next, add the corn and rice. Mix to combine and cook just until warmed.

  5. Serve on a plate topped with tomatoes, avocado, cheese, lime, and hot sauce.
