3-Ingredient Energy Bites

These energy bites make a perfect snack or breakfast for a healthy bit of carbs, fiber, fat, and some protein!

Most energy bites are sweetened with a bunch of honey or maple syrup - these are only 3 ingredients and completely naturally sweetened with dates. 

They make a great snack to prep and keep available during the week to take with you on the go or just to snack on at home!

Recipe makes ~40 energy bites

Ingredients

  • 1 cup (200g) medjool dates, pitted

  • 3/4 cup (180g) peanut butter (or any nut/seed butter)

  • 1 1/2 cups (200g) old-fashioned rolled oats

  • Optional: ½ tsp salt (if using unsalted nut butter)

Directions

  1. Place the dates in a bowl, fill with water so they are submerged. Microwave 30 seconds, then let sit 2 minutes.

  2. Drain the dates and put them in a food processor. Process for about 10 seconds.

  3. Add the peanut butter, oats, and salt. Process until evenly mixed - It may seem dry, but try to press it into a ball. Add more peanut butter if it’s too dry (the amount can depend on the thickness of the nut butter used).

  4. Roll mixture into 1-inch balls. Store in an airtight container in the refrigerator.
