White Chocolate Cranberry Protein Bites

Christmas may be over, but who else is riding holiday flavors like this into the new year??

The slightly tart cranberries with the sweet white chocolate is just the best combo! I used naturally sweetened (with fruit juice) cranberries for a healthier choice.

I used whey protein which added a little chewiness to these, but you can try any protein powder! Other types (non-whey) may effect the texture, so you might have to adjust the other ingredients to get the rolling consistency right.

Recipe makes about 25 bites (1” each)

Ingredients

  • ½ cup (120g) almond butter, unsalted

  • 2 tbsp (42g) honey

  • 3 tbsp almond milk

  • ½ tsp vanilla extract

  • ¼ tsp salt

  • 2 scoops (1/2 cup or 50g) whey protein (I used unflavored)

  • ½ cup (50g) oat flour

  • ¼ cup dried cranberries, chopped

  • ¼ cup (2oz) white chocolate chips, rough chopped

Directions

  1. In a bowl, mix almond butter, honey, milk, vanilla, salt with an electric mixer until smooth.

  2. Add the whey, oat flour and mix again until evenly mixed.

  3. Check the consistency to see if it’s easily rollable. Add more oat flour or milk as needed (amounts depend on consistency of the almond butter). 

  4. Add the cranberries and white chocolate. Use the electric mixer to mix, then fold/knead with your hands until evenly distributed.

  5. Roll into about 25 balls, each about 1” in diameter.
