Eggs & Sausage Potato Hash

I’m loving my new air fryer! It’s heats up so quickly and is perfect for one-pan meals like this - but you can also use your oven to make this sausage & potato hash.

The recipe is super easy either way. I made the eggs ahead of time in my Instant Pot (my favorite way to make soft-boiled eggs), then just tossed the hash ingredients together and baked it!

Just drizzle on some ketchup or hot sauce and enjoy!

Recipe makes 2 servings

Ingredients 

  • 2 chicken sausage, sliced

  • 1 red pepper, diced

  • 1 small (~8oz) russet potato, diced

  • 1 tsp olive oil

  • A little salt and pepper

  • 4 eggs, soft-boiled *

  • ½ avocado, sliced

Directions

  • Preheat your air fryer or oven to 400F - line a baking sheet with parchment paper if using an oven.

  • Toss the chicken sausage, pepper, and potato in the olive oil, salt, and pepper.

  • Air fry or bake for 10 minutes, toss, then air fry for another 5 minutes or until potatoes and sausage are crisp. If using the oven, cooking time may take longer - just toss every 10 min or so until browned and crisp.

  • Serve with sliced avocado and soft-boiled eggs seasoned with your favorite spices (I used Trader Joe’s chili lime seasoning)

Note

  • To make soft-boiled eggs in the instant pot, just put eggs on the wire rack with 1 cup of water underneath. Close lid, set vent to sealing, and pressure cook for 4 minutes. Carefully release vent immediately when time is up, remove lid, and let cool.
