Nut Butter-Stuffed Dates

This is one of my favorite snacks full of when I just want a little something sweet! It even has healthy fats, protein, and fiber to make it extra satisfying. Prep these and put them in your fridge for when you want them.

Recipe makes 3 servings

Ingredients

  • 12 medjool dates (the slightly smaller ones)

  • 4 tbsp (60g) nut butter

  • 1 tbsp (8g) cacao nibs

  • Optional: Fleur de sel or salt (if nut butter is unsalted)

Directions

  1. Slice the dates in half long ways (leaving one side attached) and remove any pits.

  2. Fill them with the nut butter (about 1 tsp per date).

  3. Sprinkle with cacao nibs and add a tiny pinch of fleur de sel (or salt) on top if the nut butter used is unsalted.
