Crispy Bang Bang Shrimp Tacos (air fryer)
These Crispy Bang Bang Shrimp Tacos are a perfect example that healthy eating doesn’t need to be boring 🍤✨
The sauce is sweet and tangy and the air-fried shrimp bring the best crunch to each bite! Each serving also has fiber and 46g of lean protein to help keep you full and satisfied for longer.
Recipe makes 5 servings (2 tacos per serving)
Ingredients
Crispy Shrimp
2 lb. large shrimp
¼ cup cornstarch
¼ cup light buttermilk
¼ cup Greek yogurt (2%)
¾ cup breadcrumbs
½ tsp garlic powder
½ tsp onion powder
¼ tsp salt
¼ tsp pepper
Bang Bang Sauce
⅓ cup Greek yogurt (2%)
⅓ cup sweet chili sauce
¼ cup mayonnaise, light
2 tsp sriracha
2 tsp soy sauce
¼ tsp black pepper
1 large garlic clove, minced
Additional Ingredients
Spray olive oil
10 soft taco tortillas
Shredded coleslaw
Fresh parsley, chopped
Lime, sliced
Directions
SHRIMP: Clean and prepare shrimp, then place them in a bowl. Add cornstarch powder, tossing to coat evenly.
Wisk together the buttermilk and Greek yogurt until smooth, then pour onto to the shrimp and toss until coated evenly.
In a small bowl, combine breadcrumbs with the garlic powder, onion powder, salt, and pepper. Set aside.
Dip side each buttermilk-coated shrimp (one at a time) into the breadcrumbs, then set aside on a plate or piece of parchment paper.
Preheat air fryer to 375F and spray the basket with olive oil. Place shrimp in the air fryer basket in a single layer (you may have to do this in a couple batches), then spray the tops again with olive oil. Air fry for 5-8 minutes (depending on size of shrimp) or until shrimp are cooked through and breadcrumbs are beginning to brown.
SAUCE: While the shrimp cook, make the sauce by mixing together all ingredients under “Bang Bang Sauce” in a jar. Set aside.
TACO ASSEMBLY: Warm the tortillas in air fryer. Top with coleslaw, crispy shrimp, a few spoonfuls of sauce, fresh parsley, and a squeeze of lime. Enjoy!
