Skillet Broccolini & Feta Rice
Side dishes can be kind of boring and repetitive, so I’m always looking for ways to make them delicious!
This is a super easy option that has some carbs balanced with lots of veggies, crunchy almonds, and creamy feta cheese. It’s perfect to pair with a healthy protein like chicken, fish, or beef.
It only takes about 15 minutes of cook-time (perfect for a weeknight dinner) and stores really well if you want to prep it ahead of time for the next few days!
Recipe makes 4 servings
Ingredients
½ cup (90g) dry basmati rice
1 tbsp ghee (or olive oil)
1 bunch broccolini, rough chopped (stems halved)
1 shallot, diced
¼ cup (28g) slivered almonds
¼ tsp salt
¼ tsp pepper
2 garlic cloves, minced
¼ cup (28g) feta crumbled
Directions
Cook rice according to instructions with water or broth, then set aside.
Heat the ghee in a large pan over medium heat. Add broccoli, shallots, almonds, salt, and pepper. Sauté until vegetables have softened.
Add the garlic and sauté another 30 seconds or until fragrant.
Add the rice and feta, then toss to combine.
That’s it! Serve on the side of a protein like baked chicken.
