Cashew Crunch Energy Bars
These are inspired by my favorite Lara Bar flavor (cashew cookie). I just decided to add my own little twist with crunchy cacao nibs to make it even better! And way cheaper than buying pre-made bars.
These are full of healthy fats, fiber, balanced with nutritious carbs, and some protein. Perfect snack in the morning, afternoon, or before your next workout.
Recipe makes 9 bars
Ingredients
2 cups raw cashews
12 dates, pitted
¼ cup cacao nibs
Directions
Add cashews to a food processor, pulse until only small pieces remain (not quite flour-like though).
Put dates in a microwave-safe bowl. Add water so they are submerged. Microwave for 30 seconds, then let sit for 2 minutes.
Add dates to cashews and process until mostly combined. Add cacao nibs and process until evenly combined.
Press the mixture into an 8x8 glass baking dish (for thinner bars) or a bread pan (for thicker bars like the ones pictured) lined with parchment paper, flatten the surface. Refrigerate for a few hours or until chilled.
Cut into 9 bars and store in an air-tight container in fridge.
