Cashew Crunch Energy Bars

These are inspired by my favorite Lara Bar flavor (cashew cookie). I just decided to add my own little twist with crunchy cacao nibs to make it even better! And way cheaper than buying pre-made bars.

These are full of healthy fats, fiber, balanced with nutritious carbs, and some protein. Perfect snack in the morning, afternoon, or before your next workout.

Recipe makes 9 bars

Ingredients

  • 2 cups raw cashews

  • 12 dates, pitted

  • ¼ cup cacao nibs

Directions

  1. Add cashews to a food processor, pulse until only small pieces remain (not quite flour-like though).

  2. Put dates in a microwave-safe bowl. Add water so they are submerged. Microwave for 30 seconds, then let sit for 2 minutes.

  3. Add dates to cashews and process until mostly combined. Add cacao nibs and process until evenly combined.

  4. Press the mixture into an 8x8 glass baking dish (for thinner bars) or a bread pan (for thicker bars like the ones pictured) lined with parchment paper, flatten the surface. Refrigerate for a few hours or until chilled.

  5. Cut into 9 bars and store in an air-tight container in fridge.
