Cherry Salad & Poppy Seed Dressing
🍒 I’ve been enjoying the last days of cherry season with this amazing salad!
It’s SO summery and refreshing with sweet cherries, creamy avocado, crunchy almonds, and deliciously sweet & tangy poppy seed dressing.
The dressing is made with Greek yogurt, making it lower in calories/fat and higher in protein than most others (made with mayo). Just add some grilled chicken (or another protein) to make it a meal!
Recipe makes 4 servings
Ingredients
Salad
4-6 cups Lettuce
2 cups cherries, halved & seeded
½ cup (2oz) feta, crumbled
¼ cup (2oz) sliced almonds
1 avocado, sliced or diced
Dressing
1 cup non-fat (or regular) Greek yogurt
2 tbsp water
2-3 tbsp honey
2 tsp apple cider vinegar
1 tbsp Dijon mustard
1 tbsp poppy seeds
1/2 tsp salt
1/4 tsp pepper
Directions
Mix dressing ingredients and set aside.
Layer the lettuce, then cherries, feta, almonds, and avocado.
Drizzle dressing on top and toss before serving.
