Chili-Orange Salmon
Salmon is one of my favorite foods! I love its mild, fatty and rich flavor, plus it’s full of health benefits like omega-3s, protein, vitamin B, potassium, selenium, antioxidants, and more!
This recipe is super easy and has a good sweet-savory balance. Just mix up the sauce, put it on the salmon, and bake!
Serve with a carb (like rice) & roasted veggie or salad on the side for a balanced meal.
Recipe makes 4 servings
Ingredients
Juice of 1 orange
½ tbsp smoked paprika
½ tsp chili powder
½ tsp dired orange peel
½ tsp garlic powder
¼ tsp dried oregano
¼ tsp chipotle powder
¼ tsp salt
1.5 lb. salmon fillets
Garnish: Orange slices
Directions
Preheat oven to 400F. Line a 9x13 baking dish with parchment paper.
Combine orange juice, smoked paprika, chili powder, orange peel, garlic, oregano, chipotle, and salt. Spoon onto salmon fillet (mixture will be watery).
Place the salmon on the pan and bake for 10 minutes. Remove from oven and spoon the sauce back onto the salmon, making sure to get down the sides too.
Continue to cook the salmon for 10-13 minutes (depending on how thick the cut is) until the salmon just starts to flake with a fork.
Remove from the oven, spread the reduced sauce over the top and sides of the salmon (it should be a thicker glaze by now as most liquid has evaporated).
Cut salmon and serve. Enjoy!
