Chocolate Chip Banana Energy Bites
I usually cut and freeze over-ripe bananas for our daily smoothies, but I also love baking with them or making healthy snacks like these. These chocolate banana energy bites are simple and one of my favorite flavor combos.
They’re also really quick to make - just mix the ingredients, roll, and refrigerate! Great to have in the morning with your coffee, as an afternoon snack, or for a little energy before your workout.
Recipe makes 16-20 energy balls
Ingredients
1 large (150g) ripe banana
½ cup (120g) almond butter
2 tbsp honey
¼ tsp salt
2 ½ cups (200g) oats
2 tbsp (24g) chia seeds
¼ cup (60g) mini dark chocolate chips
Directions
Mash the banana in a mixing bowl, then mix in the almond butter, honey, and salt.
Add the oats and chia seeds, then mix well. Add the chocolate chips and combine.
Either use a cookie scoop or your hands to scoop out the mixture, then roll into balls. If the mixture isn’t rolling well, you may need to add more oats or more almond butter (depending on if it’s too sticky or too dry - this can vary based on almond butter consistency).
Store in an air-tight container in the refrigerator.
