Crispy Feta Breakfast Tacos

These Crispy Feta Breakfast Tacos take 5 minutes to make and because you know I”m all about balance - they’re full of healthy fats, 3g of fiber, and 13g of protein in each taco ✨

All of which help to slow digestion, keep you full for longer, and keep you more easily in control of your food choices throughout the day because you’re not starving by the time 12pm hits!

Recipe makes 2 tacos

Ingredients

  • 2 eggs

  • 1 ounce feta, crumbled

  • 2 small tortillas (I used these)

  • ¼ avocado, mashed

  • Salt & pepper

  • Olive oil

Directions

  1. Heat a non-stick pan over medium heat.

  2. Add the feta, spread out in 2 little areas of the pan. Crack the eggs on top, then sprinkle with salt and pepper. Cook the eggs to your preference, ideally leaving the yolks runny - it makes a great “sauce” in these tacos!

  3. When the egg is done, heat the tortillas in the pan until warm and beginning to brown a tiny bit.

  4. Mash the avocado and spread it on the tortillas, then place the eggs on top and enjoy!
