Eggs & Sausage Potato Hash
I’m loving my new air fryer! It’s heats up so quickly and is perfect for one-pan meals like this - but you can also use your oven to make this sausage & potato hash.
The recipe is super easy either way. I made the eggs ahead of time in my Instant Pot (my favorite way to make soft-boiled eggs), then just tossed the hash ingredients together and baked it!
Just drizzle on some ketchup or hot sauce and enjoy!
Recipe makes 2 servings
Ingredients
2 chicken sausage, sliced
1 red pepper, diced
1 small (~8oz) russet potato, diced
1 tsp olive oil
A little salt and pepper
4 eggs, soft-boiled *
½ avocado, sliced
Directions
Preheat your air fryer or oven to 400F - line a baking sheet with parchment paper if using an oven.
Toss the chicken sausage, pepper, and potato in the olive oil, salt, and pepper.
Air fry or bake for 10 minutes, toss, then air fry for another 5 minutes or until potatoes and sausage are crisp. If using the oven, cooking time may take longer - just toss every 10 min or so until browned and crisp.
Serve with sliced avocado and soft-boiled eggs seasoned with your favorite spices (I used Trader Joe’s chili lime seasoning)
Note
To make soft-boiled eggs in the instant pot, just put eggs on the wire rack with 1 cup of water underneath. Close lid, set vent to sealing, and pressure cook for 4 minutes. Carefully release vent immediately when time is up, remove lid, and let cool.
