Healthy Street Corn Tacos

Tacos will always be my favorite easy & fun balanced meals 🌮💗

These Healthy Street Corn Tacos have a fresh corn salsa filled with fiber, easy taco ground beef for protein, tortillas for healthy carbs, and a southwest Greek yogurt sauce & cheese for fats.

They’re quick and easy to make (perfect for a weeknight dinner 🙌🏼) and great for meal prep as well. Cook once, store everything in separate containers, then put it all together for a 5-minute meal the next  few days!

Recipe makes 6 servings

Ingredients

FRESH CORN SALSA

  • 1 red bell pepper, diced small

  • 1 large shallot, diced small

  • 1 ½ cups frozen fire-roasted corn, thawed

  • 2 cloves garlic, minced

  • 1 bunch cilantro, chopped

  • 1 lime, juiced

  • ⅓ cup cotija cheese

  • 2 tbsp light mayonnaise

  • ¼ tsp salt

  • ¼ tsp black pepper

TACO BEEF

  • 1 tbsp olive oil

  • 1 ½ lb. lean ground beef (93/7)

  • 1 packet taco seasoning

SOUTHWEST GREEK YOGURT SAUCE

  • 1 cup Greek yogurt, 2%

  • ¼ cup light mayonnaise

  • 1 jalapeño, seeds removed

  • 1 lime, juiced

  • 1 tsp each: garlic powder, onion powder, smoked paprika

  • ½ tsp dried dill

  • ¼ tsp each: salt, black pepper

ASSEMBLY

  • 12 taco-sized tortillas

  • 4 ounces Oaxaca cheese, shredded

Directions

  1. In a bowl, combine all fresh corn salsa ingredients. Mix together until evenly combined.

  2. Add the olive oil to a large skillet over medium heat. Add the ground beef and break it up, allowing it to begin browning. Sprinkle the taco seasoning on top and continue to break it up and mix in the seasoning. When beef is cooked through, move it to a plate or container.

  3. In your blender (or an immersion blender works great for this too!) add all yogurt sauce ingredients, then blend until smooth. Pour into a jar for storage.

  4. Assembly: Warm 2 tortillas, top with ground beef, corn salsa, shredded Oaxaca cheese, and some southwest sauce. Enjoy!
