Hummus with Caramelized Shallots
Recipe makes 3 servings
Ingredients
Hummus
1 15oz can chickpeas/garbanzo beans
3 tbsp aquafaba (aka the liquid in your chickpea can)
2 tbsp tahini
1 tbsp lemon juice - ½ lemon
¼ tsp garlic powder
¼ tsp cumin
¼ tsp salt
Toppings
Shallots, thinly sliced & sautéed in olive oil
Chickpeas
Smoked paprika
Dried parsley
Olive oil
Directions
Drain chickpeas, reserving the aquafaba and setting aside a few chickpeas to put on top of the hummus.
Place chickpeas and aquafaba in a food processor and process until chickpeas break down.
Add tahini, lemon juice, garlic powder, cumin, and salt. Process for a minute or two until the mixture is smooth.
Spread onto a serving plate and top with toppings.
