Hummus with Caramelized Shallots

Recipe makes 3 servings

Ingredients

Hummus

  • 1 15oz can chickpeas/garbanzo beans

  • 3 tbsp aquafaba (aka the liquid in your chickpea can)

  • 2 tbsp tahini

  • 1 tbsp lemon juice - ½ lemon

  • ¼ tsp garlic powder

  • ¼ tsp cumin

  • ¼ tsp salt

Toppings

  • Shallots, thinly sliced & sautéed in olive oil

  • Chickpeas

  • Smoked paprika

  • Dried parsley

  • Olive oil

Directions

  1. Drain chickpeas, reserving the aquafaba and setting aside a few chickpeas to put on top of the hummus.

  2. Place chickpeas and aquafaba in a food processor and process until chickpeas break down.

  3. Add tahini, lemon juice, garlic powder, cumin, and salt. Process for a minute or two until the mixture is smooth.

  4. Spread onto a serving plate and top with toppings.
