Salmon Frittata with Avocado Dill Sauce

Recipe makes 2 frittatas (1 frittata per serving)

Ingredients

Frittata

  • Olive oil

  • 2 green onion, sliced (white/green part separated)

  • 2 garlic cloves, minced

  • 4 eggs

  • 2 tbsp milk (any)

  • To taste: salt, pepper

  • 1 tomato, diced

  • 4oz smoked salmon

Sauce

  • ½ avocado

  • ¼ lemon, juiced

  • 1 tbsp fresh dill, chopped

  • ⅛ tsp garlic powder

  • ⅛ tsp onion powder

  • ⅛ tsp black pepper

  • ⅛ tsp salt

Directions

  1. For the sauce, mash the avocado then add all other ingredients and mix. Set aside.

  2. In a bowl, whisk together eggs, coconut milk, salt and pepper.

  3. Heat oil in a skillet over medium heat. Add white part of scallions and garlic. Cook until fragrant (30-60 seconds)

  4. Add the onion and garlic to the eggs, whisk, then pour back into the pan. Cover and let cook for a minute or two until the eggs are set.

  5. Place frittata on a plate and too with tomato, salmon, and green onion.

  6. Top with avocado dill sauce.
