Salmon Frittata with Avocado Dill Sauce
Recipe makes 2 frittatas (1 frittata per serving)
Ingredients
Frittata
Olive oil
2 green onion, sliced (white/green part separated)
2 garlic cloves, minced
4 eggs
2 tbsp milk (any)
To taste: salt, pepper
1 tomato, diced
4oz smoked salmon
Sauce
½ avocado
¼ lemon, juiced
1 tbsp fresh dill, chopped
⅛ tsp garlic powder
⅛ tsp onion powder
⅛ tsp black pepper
⅛ tsp salt
Directions
For the sauce, mash the avocado then add all other ingredients and mix. Set aside.
In a bowl, whisk together eggs, coconut milk, salt and pepper.
Heat oil in a skillet over medium heat. Add white part of scallions and garlic. Cook until fragrant (30-60 seconds)
Add the onion and garlic to the eggs, whisk, then pour back into the pan. Cover and let cook for a minute or two until the eggs are set.
Place frittata on a plate and too with tomato, salmon, and green onion.
Top with avocado dill sauce.
