Bananas Foster Oatmeal

I love using oatmeal as a base for all sorts of delicious flavors. Basically, you get to pick any toppings you’re in the mood for and throw it on top! I also always add a scoop of protein powder to balance it out and keep me satisfied.

This recipe takes a little extra time to caramelize the bananas, but it’s so worth it! And the walnuts are a super yummy addition full of healthy fats. I hope you enjoy!

Recipe makes 1 serving

Ingredients

  • ½ cup (40g) rolled oats

  • 1 cup milk (any)

  • 1/2 tbsp coconut oil

  • 1 tbsp coconut sugar

  • ⅛ tsp vanilla extract

  • ½ a banana (ripe, but firm), sliced

  • 1 pinch salt

  • 1 tbsp maple syrup

  • ¼ tsp cinnamon

  • 2 tbsp walnuts, chopped

Directions

  1. In a saucepan, add the oats and milk. Cook on medium heat, stirring occasionally, until oats have absorbed most of the milk.

  2. Melt the coconut oil in a sauce pan over medium heat. Add the coconut sugar and vanilla, stir until sugar melts.

  3. Add the bananas, sprinkle with cinnamon and a little salt. Cook for a couple minutes until bananas soften and begin to caramelize, then flip each piece and do the same on the other side. Remove from heat.

  4. Add maple syrup and cinnamon to oats and mix. Top with bananas and walnuts. Enjoy!
