Ingredients

Chia Pudding
  • ½ cup coconut milk, light
  • ½ tbsp (3g) cacao powder
  • 1 tsp honey
  • ¼ cup (48g) chia seed
Toppings
  • 1 tbsp (15g) almond butter
  • ½ tbsp (5g) shredded unsweetened coconut
  • 1 tsp cacao nibs

Directions

  1. In a bowl, whisk together the coconut milk, cacao powder, and honey until smooth. Then, add the chia seeds and whisk again.
  2. 2. Let the mixture sit for a couple minutes, then mix again before covering and refrigerating. I like to give it one more stir about 10-15 minutes later, then refrigerate for a few hours or overnight.
  3. 3. Once the chia pudding has firmed up, add the toppings and enjoy!
