Chocolate Nut Butter Energy Bites

I pretty much always have some energy bites in my refrigerator - they make perfect snack! Portable, easy to make, and versatile for all kinds of flavors.

Try these as a pre-workout snack to give your body a little boost of energy!

Recipe makes about 14 energy bites

Ingredients

  • ½ cup nut butter

  • 2 tbsp honey

  • ½ tsp vanilla extract

  • ¼ tsp salt

  • ¾ cup (60g) rolled old-fashioned oats

  • 3 tbsp (45g) mini chocolate chips (dairy-free if needed)

Directions

  1. In a bowl, mix together nut butter, honey, vanilla extract, and salt.

  2. Add oats and (I found it easiest to use my hands) mix, then add chocolate chips and mix again.

  3. Mixture should be sticky enough to roll into balls - if not, add more honey or nut butter. The texture can vary based on the nut butter consistency.

  4. Roll into 14 balls, about 1 inch wide. Store in an air-tight container in your refrigerator.
