Loaded Shakshuka

My first time making shakshuka! Most recipes I’ve seen are pretty basic with tomato sauce and maybe some onions, but I wanted to load mine up with more nutritious goodies.

I added white beans for some carbs, chicken sausage (I used mild Italian) for more protein, as well as yellow pepper, kale, avocado, and feta - for fiber & healthy fats. Such a good combo! I hope you enjoy :)

Recipe makes 4 servings

Ingredients

  • 1 tbsp olive oil

  • 3 sausage links (diced if pre-cooked or casing removed if raw)

  • 1 yellow onion, diced

  • 1 yellow bell pepper, diced

  • 4 garlic cloves, minced

  • 1 tsp smoked paprika

  • ½ tsp cumin

  • ½ tsp coriander

  • ¼ tsp fennel seeds

  • ⅛ tsp cayenne

  • 3 cups marinara sauce

  • 1 can (1.75 cups) white beans, rinsed, drained

  • ½ bunch kale, roughly chopped

  • 4 eggs

  • 2 oz feta, diced

  • 1 avocado

Directions

  1. Preheat oven to 400F.

  2. Heat skillet w/ olive oil, add sausage, onion, and pepper. Cook until soft, add garlic, cook another 30 seconds.

  3. Add sauce and spices, white beans, and kale, mix.

  4. Create space in the sauce for eggs and crack one egg into each space. Sprinkle with salt, bake 10-15 min or until eggs are cooked.

  5. Top with crumbled feta and avocado.
