Easy Lemon Pepper Chicken
One of my favorite meal prep hacks is cooking a protein before the week begins. So when you need something healthy and last-minute, you can just throw it on a sandwich, wrap, or salad.
This is one of my go-to protein preps because it’s delicious, really easy, and super versatile! Plus, it freezes really well if you want to make more than you need and freeze it for later.
Recipe makes 4 servings
Ingredients
1 ½ lb. chicken breast, thinly sliced (~½” thick)
Lemon pepper seasoning
Salt (if seasoning is salt-free)
Directions
Preheat oven to 400F. Line a baking sheet with parchment paper.
Place the chicken on the baking sheet. Sprinkle with seasoning and salt (if using), to taste.
Bake for 12-15 minutes or until juices run clear and chicken is cooked through.
Add to sandwiches or dice to put on salads. Enjoy!
