Maple-Pecan Crusted Salmon
Salmon is my favorite fish - flavorful, filling, versatile, and full of protein and healthy fats! I usually just throw on some toppings (spices, sauce) and bake it, super easy.
This recipe is perfect for the fall or winter with the nutty pecan flavor and sweet maple syrup. The topping adds a great texture to go with the buttery fish. Serve it with a side a carb like rice or pasta + your favorite veggie like sautéed broccolini!
Recipe makes 4 servings
Ingredients
4 Atlantic salmon fillets
½ cup (50g) pecans
2 tbsp maple syrup
1 tsp apple cider vinegar
¼ tsp pepper
¼ tsp salt
Directions
Preheat oven to 400F and line a baking sheet with parchment paper. Lay the salmon on the baking sheet and set aside.
Toast pecans on the stovetop in a pan set to medium heat until fragrant (a few minutes).
Pulse pecans, salt and pepper 2-3 times in a food processor (not too much or it will be more like flour and lose the crunchy texture). Add to a bowl with the maple syrup and vinegar, stir to combine.
Spread mixture on the salmon and bake for 18-20 minutes or until cooked through (about 10-12 minutes per inch at the thickest part of the salmon).
