Protein Buckeye Bars

Peanut butter buckeyes were my absolute favorite growing up! 🍫🥜

I’ll still have one now and then but whenever I can, I love putting healthier spins on favorite treats so I can enjoy bigger servings ✨ more frequently while continuing to feel my best

These Protein Buckeye Bars taste like dessert 🙌🏼 but are made with healthy whole foods, are low in added sugar, and each one has 12g of protein and 3g of fiber to keep you satisfied and avoid that sugar rush/crash

You can even have it with a protein coffee in the morning or a glass of kefir if you want to boost satisfaction it a little more!

Try prepping them to grab any time you need a healthy snack during the week!

Recipe makes 12 servings

Ingredients

Peanut Butter Base

  • 1 cup peanut butter

  • 2 Tbsp maple syrup

  • 1 Tbsp coconut oil, melted

  • ½ tsp vanilla

  • 2 tbsp oat flour

  • ¾ cup vanilla protein powder

Chocolate Topping

  • 2 ounces dark chocolate, melted

  • ⅛ tsp coconut oil

  • 2-3 tbsp peanuts, roughly chopped

  • Salt (ideally fleur de sel or another coarse topping salt, but use what you have)

Directions

  1. Line a bread loaf pan with parchment paper and set aside.

  2. In a medium mixing bowl, add the peanut butter, maple syrup, melted coconut oil, and vanilla. Mix until smooth.

  3. Add the oat flour and protein powder, mixing again until fully combined. The mixture will be crumbly.

  4. Add the mixture to the lined loaf pan. Crumble it up so it’s relatively evenly spread out in the pan, then press down to pack it together and smooth out the top.

  5. In a small bowl, mix the melted dark chocolate and coconut oil until smooth. Pour it over top of the peanut butter base then use a spoon to spread it out evenly.

  6. Top with the chopped peanuts and a little salt.

  7. Place in the refrigerator to set for at least 1 hour, then cut into 12 pieces and enjoy! Store leftovers in an air-tight container in the refrigerator.
