Sesame Bok Choy & Carrots

This is a go-to simple recipe for me that I serve with Asian-inspired dishes, which I tend to make often - I love the umami flavor!

These ingredients are simple and include bok choy (big fan over here!), sweet carrots, and savory shiitakes. What a combo! 😋

Just chop, sauté, and serve - it’s that easy! And Isn’t it so pretty and colorful? 🌈

Recipe makes 4 servings

Ingredients

  • 1 bunch baby bok choy

  • 2 large carrots

  • 4oz shiitake mushrooms

  • 1 tbsp sesame oil

  • ¼ tsp garlic powder

  • ¼ tsp white pepper

  • ¼ tsp salt

  • â…› tsp onion powder

  • Sesame seeds

Directions

  1. Clean and cut bok choy leaves in half long-way. Use a mandolin to thinly slice carrots. Clean and thinly slice mushrooms.

  2. Heat sesame oil a skillet over medium-high heat. Add carrots and bok choy, then sprinkle with garlic powder, onion powder, white pepper, and salt. Toss to coat in oil/seasoning.

  3. Cover pan and cook, stirring occasionally, until bok choy leaves just begin to wilt. Add the mushrooms and continue to cook until stock of bok choy is tender (easily pierced with a fork).

  4. Remove from heat, sprinkle with sesame seeds, and serve!
