Tahini Granola
Granola is one of those expensive and often sugar-loaded foods when you buy it at the store. Making homemade versions has not only saved us money (especially with the amount we go through each week!), but it’s also been super easy and fun to try all sorts of flavor combinations.
It took some trial and error to make this granola since tahini has been a bit tricker to work with than almond/peanut butter, but I finally got it just right! The cashews and chocolate chips are also a really delicious addition.
Try this one your next Greek yogurt bowl! And use dairy-free chocolate chips and replace the honey with maple syrup to make it vegan-friendly.
Recipe makes ~2 cups
Ingredients
¼ cup tahini
1 tbsp (21g) honey or maple syrup
2 tbsp water
¼ tsp salt
1 ½ cups (120g) rolled oats
¼ cup (35g) raw cashews
2 tbsp chocolate chips
Directions
Preheat oven to 300F and line a baking sheet with parchment paper.
In a bowl, mix together tahini, honey, water, and salt.
Add the oats and mix until coated. Fold in the raw cashews.
Spread onto the baking sheet in an even layer. Bake for 25-30 minutes (28 minutes was perfect in my oven) or until fragrant and slightly golden brown. It won’t be completely crunchy yet but will keep drying out as it cools.
Allow to cool then fold in the chocolate chips and enjoy!
