Wild Blueberry Jam
This jam is super fast to make and turned out more flavorful than store-bought! And with all natural ingredients, way less sugar, and fewer than half the calories.
Wild blueberries are also packed with antioxidants. I use Wyman’s brand, but you can use any - or even frozen mixed berries if you want a mixed berry jam. this recipe is very versatile!
Try it paired with my homemade peanut butter or drizzly almond butter.
Recipe makes ~2 cups of jam
Ingredients
2 cups wild blueberries, frozen
2 tbsp honey or maple syrup
1 tsp vanilla extract
½ tsp lemon juice
Pinch of salt
Directions
Combine the berries, honey, vanilla, lemon juice, and salt in a small saucepan over low-medium heat. Simmer for about 5 minutes, stirring occasionally and scraping the bottom so it doesn’t burn.
Add the arrowroot/water slurry and stir quickly until thickened - about 1 minute.
Remove from heat and cool before putting into a glass jar and refrigerating.
